In the story editor highlight the text, then go to the paint bucket on the
upper right and choose a different color.
Chances are if you are printing you want to use CMYK instead of RGB. You can
choose your master list of colors with no document open from Edit>colors. You
can also roll your own.
Again assuming you are printing the document each page with some color other
than black or grey becomes a color page, and therefore much more expensive to
print. You may want to consider bolding or italics instead.
